Fats, Oils, and Grease

Be A Part Of The Team! Keep The Bay CLEAN!

In 2004, the Tri-City Council adopted Ordinance 38, adding fats, oils and grease (FOG) control regulations to food service establishments. The purpose of this new regulation is to reduce the amount of FOG from entering the City's sewer system. As FOG hardens in sewer lateral lines and sewer mains, it prevents the sewage stream from passing through and ultimately, causes raw sewage to back up into your business or home. This ordinance now requires that all food service establishments install grease removal devices and implement best management practices to prevent fats, oils and grease from entering the sewer system.

The following links contain documents such as the FOG Ordinance 38, to assist business owners in establishing and managing their FOG prevention programs. For additional information, please contact the FOG program coordinator at (510) 477-7630
